Owyachya paananchi bhaji/pakoda



There are enormous uses of owa/ajwain. Ajwain is used for culinary purpose as a spice, as well as for the medicinal purpose.


Owyachya paananchi bhaji/pakoda

5-6 Owyachi pane/ajwain leaves

Make a thick paste
2-3 tsp chickpea flour/besan
1/2 tsp rice flour
1/4 tsp turmeric powder
1/2 tsp chili powder
salt to taste
water as required

Oil for frying

Method

  • Heat the oil inthe kadhai.
  • Make a paste of all ingredients. Add a tsp of hot oil in it. 
  • Dip the leaves in the paste. 
  • Deep fry till golden brown in the oil.

Coconut Chatney





Ingredients

1 cup Freshly grated coconut
1 tsp roasted coriander seeds
2 garlic cloves
1 tsp tamarind
2 dry red chilies or 1 tsp red chili powder
salt to taste

Tempering
1/2 tsp oil
1/4 tsp mustard seeds
1/2 tsp asafoetida

Method
  • Grind all the ingredients in a grinder. Transfer the contents into a bowl.
  • Heat oil in a iron ladle(paLi) and add all tempering ingredients. Transfer all in the chutney. Mix well.
  • serve with Dosa.

Batatyachi kape


   Shallow fried potato slices

Batata Bhaji is deep fried version of batatyachi kape. For batata bhaji, potato slices are thin and are dipped in the wet batter of gram flour. While making batatyachi kape, the slices are slightly thick and dry rice flour is used for coating. I generally make this as a side with mugachya daLichi khichdi with karmane.

Ingredients
2 potatoes ( washed and sliced with medium thickness)
1 tsp chili powder
1 tsp turmeric powder
salt to taste
rice flour as required

Method
  • Apply chili powder and turmeric powder to the potato slices. Apply salt.
  • Heat griddle/non-stick pan/tawa on medium flame. Arrange the slices by dipping each one in the dry rice flour.
  • Drip oil with spoon from the rim of the griddle . Cover the griddle with lid . Let the slices cook on medium flame.
  • Check after 1-2 minutes by pricking one or two slices with a fork/knife.
  • When done turn the sides of the slices. Drip little oil from the sides and let it turn to golden brown.
  • Serve hot as a side or as a snack.

PaDwaLachya KowaLya biyanchi ChaTNi

PaDwaLachya biyanchi chaTNi

As I mentioned in my earlier post, If the Padwalachi bhaji/vegetable is tender, seeds have to be. I made spicy chaTNi out of it. It doesn't last long and is to be consumed on the same day because of the water content in it. Also it has a slight laxative effect so be easy on it.








Ingredients
1/2 cup tender seeds of PadwaL/snake gourd
1 green chili( roasted on gas flame directly)
 coriander leaves(optional)
1 tsp roasted peanuts/roasted sesame seeds(optional)
1-2 tsp grated coconut
 salt & sugar to taste
1 tsp curd/tamarind/lemon juice/ raw mango (for sour taste)

Tempering (optional)
Oil
mustard seeds
asafoetida


Method
  • Roast seeds and chili on the hot griddle on medium flame. ( I roast the chili directly on the flame it tastes different)
  • Grind all the ingredients finely . Serve with dal-rice or as a sandwich spread.
  • If using  curd as a souring agent, mix it after grinding.
    Tempering is optional.

LasooN ChaTNi

Ingredients
1 cup dry grated coconut
2-3 dry red chilies
5-6 garlic cloves(peeled)
1 inch tamarind piece (butuk)
salt to taste

Method
Dry roast all the ingredients one by one except garlic.
Grind in a mixer with garlic.(taste better if made using khul- batta)
Store in an air tight container.

Note
You can store it for a month.
Used as accompaniment with bhakaree, chapati, bread.

Sprouted mixed pulses

These mixed pulses soaked in water for 3-4 hours,drained and  tied in a muslin cloth or even covered & kept in a warm place for 3-4 hours increases the nutritional value by sprouting.

A cup of boiled sprouted mixed pulses with a pinch of salt ,cumin powder or chat masala can be  an healthy home made option of protein rich food for growing children on alternate days or twice a week at least.

Adding chopped tomato/carrot/cucumber/onion will increase the nutritional value with the taste.

Undgi lasooN chaTNi

Undgi chaTNi means chaTNi made without any efforts (skill,time energy etc)yet it tastes amazing...:)

to make this you don't need any mixer/grinder,gas or any type of tool.






Ingredients
1/2 cup Freshly grated coconut
2-3 garlic cloves(crushed)
1 tsp chili powder
1 tsp tamarind paste
 salt to taste
Method
Just mix all the ingredients together in a bowl ( Use your magic hand and not spoon)
and that's it .... chaTNi...sorry... undgi chaTNi is ready
